PUERCO VERDE (Oaxaca) Pork shoulder in a green sauce of tomatillos, poblano chiles and greens. Herbacious. Roughly chopped. Served with white rice and black beans.

MOLE POBLANO (Puebla) Chicken thigh in a complex sauce made of 4 types of chiles, fruit, nuts and just a hint of chocolate. Served with white rice.

POLLO en SALSA NARANJA (Nuevo Leon) Chicken thigh meat in sauce of oranges, ancho chiles and fiery de arbol chiles. Sharp not sweet. Served with white rice.

COSTILLA de RES (Chihuahua) Beef short rib slow baked in adobo sauce. Served with white rice and black beans.

CHILES RELLENOS de QUESO (D.F) Ancho chiles filled with corn and cheese, covered with crema, baked. Served with white rice.

CAMARONES AJILLO (Veracruz) Tiger shrimp, in shell, sauteed with garlic and guajillo chile. Served with white rice.
